Swiss Beef
With pride, we can say that this beef is probably the best the Swiss Confederation has to offer. One of the producers is Markus Kern at the Waldhof farm, near Gansingen in the canton of Aargau. The farm lies amid meadows and fields, a paradise for the cattle herd.
We encountered such a “team” at Markus Kern’s idyllic farm operation, “Waldhof,” in Gansingen in the canton of Aargau. The passionate and knowledgeable farmer cares for each individual animal with great love and dedication; here, instead of 11 months, the cattle reach an age of around 18 months. As the owners of Luma were able to see for themselves during their visit, the cattle live nestled among meadows and fields like something out of a picture book. They move freely in spacious outdoor and indoor barns and can go in and out at any time. Markus Kern feeds his animals exclusively with grass, hay, and silage, and even produces a large portion of the feed himself. He sources a supplementary “grain muesli” from a local Swiss feed mill. The cattle of the breeds Angus, Blonde d’Aquitaine, Charolais, Limousin, or Simmental are carefully hand-selected under the quality label Handselected Swiss Beef. Thanks to farmers like Markus Kern once again: absolutely convincing!
