Swiss Beef
We’re proud to say this beef is likely the very best the Swiss Confederation has to offer. One of the producers is Markus Kern from Waldhof, located near Gansingen in the canton of Aargau. The farm is surrounded by meadows and fields – a true paradise for his herd.
We met such a herd on Markus Kern’s idyllic Waldhof farm in Gansingen, Aargau. The passionate and knowledgeable farmer personally cares for each of his animals, which live around 18 months here instead of the usual 8-11 – with great love and dedication. As the LUMA founders saw during their visit, the cattle live in a storybook setting, embedded in lush pastures. They roam freely between spacious barns and open fields, moving in and out as they please.
Markus Kern feeds his animals exclusively on grass, hay, and silage – most of it produced right on the farm. An additional “grain muesli” comes from a local Swiss feed mill. His carefully selected cattle – from breeds such as Angus, Blonde d’Aquitaine, Charolais, Limousin, or Simmental – are handpicked and proudly carry the Handselected Swiss Beef label.

Once the animals are slaughtered, the carcasses are selected at the slaughterhouse according to LUMA’s quality criteria. Only the meatiest and most marbled cuts make it into LUMA’s “Handselected” label.
