ENGADINE LAMB

These “white Alpine sheep” from the Upper Engadine have surely never heard of the Zurich expression of strength “Du Alpenkalb!”

Yet when it comes to strength, the ecologically raised Engadine breed of Andri and Dury Casty from Stalla Pundschermaun is just as convincing. From the time they are lambs, the animals live a natural, idyllic life on vast alpine and common pastures, feeding amid blooming nature on juicy grasses, robust herbs, and young leaves. They drink exclusively fresh water directly from a Graubünden mountain spring. The Castys, established lamb farmers in Zuoz for generations, consistently refrain from using concentrated feed additives in feeding their animals.

Throughout the entire year, the flock is accompanied by a shepherd who specializes in ecological and biodynamic animal husbandry. Even in winter, he remains by the lambs’ side and bivouacs—from Toggenburg to the Jura—even on harsh nights. The Casty family farm lives and breathes the natural cycle of lamb farming and committed meat breeding. At Stalla Pundschermaun, there is unanimous conviction: those who eat meat want to be sure that the lambs have lived an uncompromisingly animal-friendly life. No wonder the stress-free life of animals (and breeders) from the Upper Engadine is reflected on the plate—Andri Casty’s lamb is considered a true delicacy, tender yet full-bodied in flavor.
