Rheintaler Ribelmais proudly takes its place among these regionally famous foods. It is, after all, the only Swiss grain product to have earned a protected designation of origin.
It’s no surprise, then, that the “Ribelmais chickens” offered by Williams ButchersTable are of particularly high quality. These French Sasso chickens are raised in Mörschwil, Appenzell, on the farm of Robin Geisser – in very small flocks and with more than half of their diet made up of this fine corn.
For poultry farmer Geisser, animal welfare comes first. The young birds roam freely on lush meadows, under wild bushes and hedgerows. They only go into the winter garden if they feel like it – or if hunger calls:
